Ricotta Spinach Chicken Roll-Up's

I am going to attempt a new venture...when I find new recipes I want to try out I am going to take pictures of my steps along the way and post here for you all to see :) This recipe sounded SO yummy and it was! I always get nervous when the house is smelling delicious, like it was...and think this better taste as good as it smells! Well it sure did! I would give it a 8 on the food scale :) Another good thing about this dinner, was it was fairly healthy! I used reduced fat ricotta cheese and reduced fat 4-Cheese Italian.


Here are the ingredients I made our dinner with!



I mixed a container of Ricotta Cheese, with Rosemary, Basil, Oregano, minced garlic, and half of a 4 Italian Cheese bag. Then I spread over my thinly sliced Chicken Breasts.


Next I layered them with Spinach!


Next I layered with a few slices of Deli sliced Ham.

Here is where my camera died of course and I couldn't find my charger anywhere! :( After the last step I rolled the chicken breasts starting from the skinny side. I dipped them into a whisked egg then rolled in bread crumbs. **(I made my own bread crumbs, with a few slices of Whole Wheat toasted bread, (toasted to dry it out a little) and then some garlic powder, onion powder, and parsley flakes. I put all of the ingredients into our manual food processor and mixed until it was a crumb mixture.)

After I rolled them in the bread crumbs I placed them all into a baking dish and baked at 350 degrees for 45 minutes. They were DELICIOUS! Mike said he would definitely eat them again, which is always a good sign!! Wish I had pics of the last few steps and end product...but next time I will have to remember to have my camera fully charged! Enjoy if you make it! Yum!
